PRIMARY LIQUIDS SPIRITS IMMERSION DAY

Morning session - Part I (1 1/2 hours) 8:30-10:00 am:

  • History and mechanics of fermentation/distillation
  • Key differences between pot still & column still distillation/origins/applications
  • Base materials used for the making of white spirits
  • Understanding vodka, aquavit and gin
  • Vodka/aquavit styles and flavoring techniques
  • Gin styles and the key importance of botanicals
  • Blind tasting of various vodkas and gins

BREAK (15 minutes) 10:00 - 10:15 am

Morning session - Part II (1 3/4 hours) 10:15 - 12:00 noon:

  • Understanding tequila & mescal
  • Understanding rum/rhum/cachaça/guaro
  • White spirits becoming brown spirits
  • Key importance of wood maturation/types of wood/evaporation
  • Blind tasting of various tequilas and rums
  • Understanding liqueurs/cordials/specialties
  • Base materials used in the making of liqueurs

LUNCH BREAK (1 hour) 12:00 - 1:00 pm

Afternoon session - Part III (1 1/2 hours) 1:00 - 2:30 pm:

  • Understanding brandy, grappa, eau-de-vie, marc
  • The basics: Italy's grappas & brandies and France's marcs & eaux-de-vie
  • France's Cognac, Armagnac, Calvados
  • Spain's Brandy de Jerez
  • North America's alambic distillers & mainstream brandies
  • International brandies from South Africa, Mexico, Chile, Peru
  • Blind tasting of international brandies

BREAK (15 minutes) 2:30 - 2:45 pm

Afternoon session - Part IV (1 3/4 hours) 2:45 - 4:30 pm:

  • Understanding whisk(e)y
  • Scotch whisky's 3 varieties: blendeds, blended malts, single malt
  • Irish whiskey's 3 varieties: blended, pot still, single malt
  • North American whiskeys: Bourbon, Tennessee, Canadian, rye, straight, blended
  • Blind tasting of international whiskeys

Afternoon session - Part V (30 minutes) 4:30 - 5:00 pm:

  • Discussion of cocktail culture and its pivotal role with spirits growth
  • Discussion of marketplace trends in U.S. and the global market
  • CLOSE 5:00/5:15 pm
